About Karen Caplan, MS, RD, CDN
I started having an interest in nutrition during college, after the freshman 15 set in. At the time, I did not have very good eating habits as I was living the life of a social college student.
After graduating from the University of Maryland in 1990 with a Bachelor’s of Science degree, I passed the Registered Dietitian exam in 1994 and went on to receive a Master’s degree in Nutrition at Hunter College in 1996.
While I was a student at Hunter, I completed a six-month internship program at Metropolitan Hospital and Daughters of Jacob Geriatric Center in New York.
For many years afterward, I worked in long-term care and sub-acute rehabilitation centers where I learned how to prescribe diets and monitor the nutritional status of the patients for many disease conditions including diabetes, kidney disease, hypertension and cardiovascular disease. Some of these patients were on tube feeding and others needed to gain weight once they were admitted fragile and weak.
After providing dietary management for so many patients for a variety of medical conditions, I decided it was time to embark on my lifelong passion of disease prevention, wellness and personalized nutrition services. I wanted to become empowered with new ideas and a taste of how to improve peoples’ lifestyles and eating habits.
Next, I received my Certificate of Training in Adult Weight Management from the Commission on Dietetic Registration and Received a Nutritarian coach certificate through Dr. Joel Fuhrman’s Nutrition Education Institute
However, I was not done learning. I felt that with all of the mixed information out there, it was easy to get confused about what to believe about healthy eating. I was then fortunate to meet Keri Glassman, MS, RD, a leader in the field of nutrition and I
enrolled in The Nutrition Studio and became a Nutritious Life Master Certified Nutrition and Wellness Coach.
In addition, as a mom of two boys who were eating well too, I wanted to make sure
their friends and classmates were doing the same, so I volunteered as the Health and Wellness Chair at their schools. In my capacity, I strove to influence children to make better food choices.
